The Williams pear, named after its English breeder Christen William, ripens in the mild climate of the canton of Valais under particularly favorable conditions. The production of Williams pear brandy, which is already easily recognizable by its taste, follows a special process that has been perfected over many years.
The fruits, harvested in late summer, are delivered to our distillery in Escholzmatt in air-permeable crates, where they ripen for a few more days and develop the delicate aroma typical of the variety.
During distillation, the pre- and post-run is carefully separated. The core, which is around 70% by volume, the best of the good, is carefully aged before being diluted to 41% vol., clarified, filtered and bottled without any other additives.
By the way, it takes well over 10 kilograms of fully ripe fruit to make one bottle of Williams! The result is a uniquely fine, crystal-clear elaborate, fragrant of fresh, ripe pears, which is particularly suitable as a digestif.
