Belgian Style Imperial Strong Ale (barley wine) is aged for months in old rum and whiskey barrels. It has a reddish golden blonde color, a fruity peach note, spicy, light hop aroma, is very full-bodied with fruity sweetness, mild, with little bitterness and intense finish. Grand Crus mature for several months in oak barrels pre-soaked with rum or whiskey in the old monastery cellar. Since the full aromas are produced almost exclusively by yeasts and the fermentation process is not always exactly the same, the beers differ in taste from brew to brew. This is why we also speak of “single batch beers” or “limited editions”.
