An India Pale (IPA) made with organic malt, German hop varieties and wild yeast. Fruity, hoppy aromas on the nose and a short-lasting bitter finish.
Apollo is produced along the lines of a British IPA, less bitter and a weaker hop aroma than American IPAs. Fermentation with wild yeast further creates a rustic, yeasty character.
AROMA & FLAVOUR.
Short-lasting bitterness, yeasty character and a dry, slightly sour finish. Aromas of citrus fruits.
RAW MATERIALS
Apollo Wild IPA is brewed from 100% organic malt. For bitterness, different hop varieties are used from Germany; preferably organic quality.
PRODUCTION
Fermented with wild yeast, Apollo takes up to 6 months to ferment. The yeast metabolizes all the sugars in the beer, which is why Apollo also has a dry finish and no more residual sweetness.
